Splendid. Butter balanced with citrus with a long finish that I always search for in high-end Chards and seldom find. This Cervantes isn't high-end, and at this price it's a steal.
Wine Maker Notes
Our Cervantes Sonoma Coast Chardonnay comes largely from the cool, windswept Sangiacomo Vineyard. Situated near San Pablo Bay, the grapes at Sangiacomo mature slowly, developing intense varietal character, while preserving excellent natural acidity. To retain the vibrant, pure fruit expression of this exceptional site, only about 55% of the wine went through malolactic fermentation. Though the wine was entirely barrel fermented, to further accentuate the wine’s bright fruit, we used only 30% new oak during eight months of sur lee aging, with the rest being neutral barrels.
The 2012 growing season offered fantastic growing conditions. Significant rains in early March were followed by perfect weather during bloom and an excellent fruit set. Summer temperatures were also ideal, with alternating periods of fog and sunshine ensuring great hangtime and no significant stress on the vines. With no notable heat events, and no threat of rain, we were able to pick exactly when we wanted to, resulting in pristine, perfectly developed fruit with great balance and acidity.
