Much like Scotch, Irish whiskey has some regulations about production, but the requirements are less stringent than its neighbor. To create the distinct flavor profile of Irish whiskey, the spirit is distilled three times and aged in wooden casks for a minimum of three years. The distillation process is meant to show the flavor of the grains used in the mash.
