The dark red color, cherry fruit and warm, smoky toast flavors apparent in this wine are all trademark descriptors for Washington Merlot. At bottling we blended in a small percentage of Washington Cabernet Sauvignon and Cabernet Franc to add complexity to the Merlot character. The resulting blend is attractively fruity with a medium ruby color and, like all our wines, is well suited to be served as a companion to good cuisine.
We cool fermented the juice in tanks at 55°F, and then arrested the fermentation by chilling the new wine which leaves it naturally sweet. The combination of high natural acidity and residual sweetness gives the wine body, flavor and intensity.
