Chandon’s smaller production sparkler, the etoile Brut is 52% Chardonnay, 37% Pinot Noir and 11% Pinot Meunier, with most of the grapes grown in Napa and Sonoma though the wine is given a North Coast label. It has a toastiness akin to creme bra»lee, a bite of yellow cider apple and almond that’s quite savory and a medium finish.
Tiny bubbles elevate a complex bouquet of almond, honey, and buttered toast with a distinctive hint of citrus blossom that arouses the senses. étoile`s structure is long, soft, and creamy with flavors of fuji apple, candied ginger, and a savory hazelnut spice. These flavors intensify across the palate, building to a lingering yet, lively finish.
Wine Maker Notes
French for star -- étoile represents our commitment to a classically crafted apéritif style that personifies elegance and grace. This prestige cuvée is designed to achieve a seamlessness and balance that can only be realized by selecting the finest fruit from our cool and cold climate vineyard sites. Resting in the bottle sur lees- on yeast- for a minimum of five years, the wine evolves, building layers of depth, complexity, and harmony while retaining texture and vibrancy. Enjoy étoile upon release or for years to come.
Beautiful balance of yeast, citrus, nuts and good fruit makes for a very pleasant, easy-to-like mouthful." - Wall Street Journal

Chandon`s Winemaker Wayne Donaldson recommend pairing étoile with delicate, sweet or even aromatic flavors. Enjoy it with sautéed sea bass, dungeness crabcakes, grilled scallops, or on its own before the start of a meal.
