The grapes are then pressed to provide superior quality juice for the production ofMirabelle Brut. After the primary fermentation, the base wines are allowed to rest in our coolunderground cellars. After bottle aging on the yeast for at least two years, MirabelleBrut is ready to be enjoyed.

The blend of young and older wines gives it a creamy richness, with lots of ripe peach and honeyed brioche, backed up by a medium-bodied, crisp, fresh, pure, dry sparkling wine that offers well-defined, small bubbles. This is a beauty to drink over the next few years.
