Description:

Mirabelle Brut is a unique blend of hand-harvested Napa, Sonoma, and Mendocino countyChardonnay and Pinot Noir, picked at their optimal maturity from select, low-yielding vineyards.Throughout the growing season the grapes are constantly cooled by the breezes coming from thePacific Ocean, which adds to the potpourri of flavours that unfold in the future.

During harvest, these premium grapes are carefully sorted and placed into small bins to reduce anypossible damage. The grapes are then pressed to provide superior quality juice for the production ofMirabelle Brut. After the primary fermentation, the base wines are allowed to rest in our coolunderground cellars. Between 20 to 30 percent of these wines are barrel aged for two to six years.The various still wines are then individually evaluated and carefully blended by our winemakers toundergo fermentation in the bottle. After bottle aging on the yeast for at least two years, MirabelleBrut is ready to be enjoyed.

Notes on the Schramsberg Vineyards Mirabelle Brut 750ML

Tasting Notes Stylistically, Mirabelle Brut has an elegant, toasty aroma, which leads into crisp and complex flavorson the palate. It is impossible to mistake Mirabelle’s Northern California heritage - the freshness onthe mid-palate continues through to the finish. Mirabelle Brut pairs well with fish and shellfish, lightappetizers and pasta.

Technical Notes (55% Chardonnay/45% Pinot Noir). After bottle fermentation and about two years of aging en triage,subsequent trials determine the ideal dosage to finish this brut style
