The very low yield per hectare of a uniquely selected Cabernet Sauvignon is the cradle of this deep-red overflowing wine. Cava Amethystos matures for 15-18 months within new oak barrels from the Allier woods in France, then ages undisturbed in its bottle, in specially arranged underground cellars, for another 24 months. The attractive result is spicy and exciting to the smell, with shades of chocolate, coffee, raspberry and gooseberry, while its strong tannins offer a characteristic long-lasting after-taste.
I served this wine to a group of wine enthusiasts; and they all liked it. It is a full body red wine with a spicy note.
