Tasting Notes Medium topaz color; superb clarity. Smells doughy/ bready / yeasty and a touch sour in the first welcome inhalations; the aroma deepens after further aeration, giving off lovely notes of green pepper, black pepper, and beeswax/paraffin. Entry is intensely grapy and ripe but not overly sweet or thick in texture; mid-palate showcases the grapiness more in a dried out manner than the concentrated, fruity entry and it works, as a result, for the finish, which is medium-long, off-dry, slightly baked, and nutty. Technical Notes Soberano is a solera brandy and number one in sales of Brandy de Jerez from Spain. Soberano brandy is the number one brandy from Gonzalez Byass. Soberano brandy is aged in former American oak sherry barrels. Just as with their sherry, Gonzalez Byass uses the Solera system for their brandy. After each bottling, new brandy is added to the barrels to ensure they are always full. This brandy solera system was established 150 years ago, so a few drops from the original distillation is in each bottle.
