Baked pear, roasted salted almonds, burnt orange peel, purple wild flower, and green olive rise from the glass. The palate is smooth and salty, with brine and olive bringing up the back end along with roasted peanut. The finish is briny and lasts.
Pretty light gold color, the Fino presents delicate aromas of nuts and hints of dried fruit. Light-weight and completely dry, the finish ends with notes of green apples, almonds and sea salt.
Once the cellar master has categorized the wine as Fino, it is fortified to about 15 % alcohol. The Palomino Fino is introduced to the Manzanilla Solera where it remains in barrel for a minimum of five years.
