| Two new blocks came into production this year on completely different soil types. The Taylor River block is on stones, silt and a mixture of clay. This has produced lovely small berries, intensely colored wine with beautiful broad deep plum flavours. While the Benmorven block is 100% clay. This block produced fruit of extremely dense color, high rich flavor intensity with a wickedly low PH resulting in a more structured wine with incredible depth. Fermentation of the Pinot Noir in our new “state-of-the-art” Pinot tanks and pressing in our traditional basket press has resulted in probably the best Pinot Noir yet made by Wither Hills. The flavors are very sweet and lingering. Look for raspberry, plum and Campari - like fruit and spice. Beautiful youthful tannins ensure the ageability of this wine will reward those with patience, consistent with premium Pinot Noir. |
