2000 Brut Blanc de Blancs Among the best, there is no doubt that you will experience a sublime wine when you pop this one open. The wine is crisp and fresh with a light gold color. You detect lilacs and ruby grapefruits. Behind an even mousse, you will discover honey, vanilla and apples. Thanks to a great balance, the layering and complexity deliver an outstanding wine in a few years (yes, it’s okay to age Champagne). Pair with Osetra caviar and lobster.
Tasting Notes ColorDelicate, golden yellow.BouquetThe bouquet displays white flower notes, including hawthorn and magnolia. Spicy hints of cinnamon underscore fresh honey tones. PalateUpright and lively, the Champagne is fine, sensual and elegant, finishing with a round persistence.
Wine Maker Notes Within hours of picking, the Chardonnay grapes are brought to Perrier-Jouët’s private pressing house in Cramant, where they are gently pressed at a low pressure on the house’s traditional wooden presses. The juice is racked at 50° F, and then transported to Épernay for fermentation. In the cellar, modern stainless steel tanks provide precise temperature control for the alcoholic and malolactic fermentations of the base wine. A liqueur de triage of sugar, yeast and base wine is added to the bottle, and then the wine is aged on the lees in the house's historic champenois aging cellars.
Technical Notes This offering from the folks of the Maison Belle Epoque is a rare treat, and as a result, quite pricey. In vintage years, you will get 100 percent Chardonnay from the Côte des Blancs—specifically from the village of Cramant.
Food Pairing The 2000 Fleur de Champagne Blanc de Blancs is ideal on its own, and also pairs perfectly and powerfully with caviar.
