Notes on the Boroli Barolo Chinato 750ML

Tasting Notes The noseshows delicate but pronounced herbal aromas. The palate is sweet, spicy with a moderately bitter aftertaste.

Wine Maker Notes Barolo “Chinato” is a unique aromatic wine produced with DOCG Barolo Nebbiolo wine infused with over twenty herb extracts, quinine(china bark), sugar and alcohol. It has a cherished tradition among the Piemontese, but is rare due to the limited and costly nature of its production. Boroli’s Chinato is produced applying their winemaker Enzo Alluvione’s distinct and secret family “recipe” using Boroli’s Nebbiolo wine from their estate Barolo vineyards. The color is ruby/violet in color with amber tones. The aroma is delicate yet pronounced, with aromas echoing the many herbs expertly prepared according to family tradition. On the palate it is very soft, round and persistent. It is pleasantly spicy and sweet but with a gently bitter aftertaste. At 16% alcohol it is traditionally served straight (at room temperature or slightly cool) as an after dinner drink, or “digestivo”. In this way, it makes for an excellent accompaniment to high cocoa content dark chocolate. It also can be used as an “aperitivo” when mixed with soda water and ice, or in place of sweet vermouth, Campari and the like.

Technical Notes Chinato, an after-dinner digestive, is produced with Barolo, herb extracts, quinine, sugar and alcohol.
