Wine Maker Notes Both the Sauvignon Blanc and Semillion grapes for Niveus were selected from the Block House Vineyard in the slightly cooler region of Yountville in the Napa Valley. The Block House Vineyard is on of the oldest vineyards in Napa County and has been sustainably and organically farmed for over 30 years. The grapes were picked and sorted by hand, cold soaked and whole cluster pressed. During fermentation and aging, the two varietals were kept separate as to allow careful aging analysis. No lots were allowed to preserve proper acidity and varietal characteristcs. Wines were aged an average of 8 months in hand selected French cooperage and then carefully blended.
