We sourced the grapes for our Riesling from select vineyards along the California coast, primarily in Paso Robles and Mendocino. Influenced by the chilly breezes and prevalent fog from the Pacific, the grapes develop rich stone-fruit flavors while preserving their natural acidity and delicate aromas.Our Snap Dragon Riesling was crafted with attention to balance and style. We fermented the fruit in stainless steel tanks at low temperatures. This process lengthened fermentation, slowly extracting nuances and keeping flavors bright and lively. We arrested fermentation right before the wine was dry, imparting a round, full-bodied sweetness. Just prior to bottling, we added a dollop of Gewurztraminer, which complements the Riesling with its effusive aromatics.
