In 1881 Andrea Sbarboro founded the Asti Winery in northern Sonoma County. Applying time-honored methods and expertise from the old country, Sbarboro and a group of Italian immigrants formed an entire community around which winemaking was its soul. Today, Cellar No. 8 wines honor and reflect the tradition of winemaking at Asti in a series of rich, complex red wines from carefully chosen vineyard sites in California.Vintage & VineyardsThe 2007 growing season began with a cold, dry winter with below average rainfall, and dry conditions persisted throughout the season. March brought warm weather that initiated early bud break. The beginning of Summer was mild, making vine health excellent and a heat spike in late August kicked off harvest. A cool dip in September slowed ripening and allowed for the grapes to develop consistently and evenly. Harvest overall produced grapes of great structure and ripe tannins.
A wonderful example of California Cabernet with intense notes of dark cherry and leather. Ripe black currant and cassis enhance the spicy clove and black pepper flavors. Rich, silky chocolate and hints of vanilla round out the palate making this wine approachable and delicious.
