This concentrated fruit results in wines that are dark in colorand have depth and intense flavor. The black cherry, raspberryand chocolate aromas found in our Canoe Ridge VineyardMerlot are even more intense in this reserve bottling. The concentrationof these flavors allows the use of more new oak barrelswithout overpowering the fruit flavors. The higher level ofoak adds more richness and roundness to the palate and addssmoke and sweet toastiness to the aroma. We blended in 12 percentof Cabernet Sauvignon to fill out the middle palate and toadd additional aromas and complexity.

The complexity and ripe fruit flavors of our Reserve Merlotmake it wonderful to drink all by itself, but it really shines whenpaired with food. The deep, rich body and toasty oak make it anatural accompaniment to roasted or grilled meats such as pork,beef or pheasant. It also pairs very nicely with rich, fatty salmoncovered with reduction sauces that have a touch of sweetness orberry fruit to them.
