Each variety was hand-picked at different times, depending on the ripeness of the grape. After selecting the best grapes from each bunch, the grapes macerate with their juice for four days prior to fermentation. The grapes are macerated on their sins for a total of 25 days and malolactic fermentation occurred in 50% oak barrels and 50% in stainless steel tanks.
Climate: High mediterranean, with very hot days and cold nights with moderate rains. This climate allows the grapes to ripen very well during the day and slowly during the night. Soil: Limestone on the surface layer and clay on the inside layer. Poor in organig matter, which causes the vines to yield less quantity of grapes, as a result we have concentrated grapes.
