A ripe and fleshy red displaying cherry and brambly fruit, mixed with Asian spices, dried herbsand hints of fennel. Juicy notes of ripe blackcurrant mix with characteristic leafy and forest floor Cabernetelements on the long and finely textured finish.
57% Shiraz/43% Cab Sauvignon). The vines are between 10-13 years old, and are grown in sandy loam overlimestone on the hillside and red loamy soil over limestone on the flat. Fermented on its skins for 5-7 days withpump overs four times/day, the wine was pressed and fermented for 15-16 months in oak hogsheads andbarriques (60% American and 40% French; 60% neutral and 40% new). Sourced from eight differentvineyards – six of Shiraz and two for the Cabernet, each parcel was vinified separately and blended justbefore bottling.
