Wine Maker Notes
Grown in calcareous and clayey soil, the wine is hand harvested and then vinified in stainless steel tanks, with maceration at a controlled temperature. The wine’s fine, persistent froth is developed through a natural re-fermentation known as the Charmat method. With a bouquet of red fruits and spices, this dry, sparkling wine features semi-sweet fruit flavors that are nicely balanced by light tannins. It should be enjoyed chilled and pairs well with cured and roast meats, as well as pasta with a Bolognese sauce.
ideal to accompany any typical dish from the Emilia’s tradition, mainly to preserved meats, salami and tagliatelle with Bolognese sauce. Fantastic with roast meats.
