The 60+ year old vines are hand-picked and refrigerated overnight toretain fresh aromatics. Eighty percent of the grape bunches aredestemmed and crushed, and twenty percent is macerated andfermented with stems. Fermentation takes place in open-top fermentorswith daily pump overs. Aged 9 months in new French oak.
