Chateau de Montifaud has been in the Vallet family for six generations. This has allowed ample time to refine and perfect their production methods, allowing for the creating of truly exceptional Cognac. Every step of the process--through viticulture, vinification, distillation, maturation, and bottling--is carefully monitored to allow for excellence. Distillation is carried out with the wine sediment to preserve the floral nuance of the spirit, while aging in Limousin oak barrels is used judiciously.
Chateau de Montifaud VSOP spends its first eight months in new oak barrels, developing a golden amber color and surprisingly mature aromas of dried flowers, apricot, toasted almond, vanilla, allspice, cedar, and fresh herbs. The palate is similarly generous, introducing apple, leather, caramel, and an elegant hint of rancio.
