Our 2010 Beaulieu Vineyard Napa Valley is loaded with lush blackberry and black-currant character, with nuances of red plum and cedar box. Hints of vanilla and smoky oak spice elevate the rich aromas and add complexity to the bright, beautifully balanced flavors. After the grapes were destemmed and crushed, we fermented the must in stainless steel tanks until dry. We then pressed the wines and transferred them to toasted 60-gallon oak barrels for 18 months of aging, selecting Hungarian, American and French barrels to achieve a complex array of oak spices. A blend of Syrah added spice, while splashes of other varietals enhanced the wine’s texture and flavor profile.
With its firm structure, this Cabernet Sauvignon complements full-flavored cuisine, such as garlic and rosemary grilled lamb chops, medallions of beef tenderloin, portabella mushrooms with polenta, or aged Gouda with walnut toasts.
