The 2007 vintage had extremely small berry size so we were able to extract outstanding concentration. The 2007 vintage was also fermented at a fairly high temperature (85º F), which brings notes of darker and more profound fruit with a bigger structure to make sure that the mid palate is full, expressive and round enough to support such high concentration. A very wide range of outstanding vineyards create a diversity of profiles, that when blended bring more depth and complexity to the wine. In order to respect these identities this wine was naturally fermented unfined and unfiltered.
