Grapes were selected from several distinct Sonoma County hillside vineyards. The soils range from volcanic clayto gravelly clay-loam, which supply rich nutrients and stable organic materials. The loam soil is ideal for filtrationand drainage of the land. After destemming, the must is kept on the skins for a 12 hour cold soak. Fermented instainless steel and aged 5 months on the lees with weekly stirring.
