This Gavi wine is made where the grapes are grown (right under the Ligurian Apennines). Following the separation of the must from the skins, the wine is refrigerated and undergoes static racking, after which the fermentation takes place at a controlled temperature (20 degrees Celsius). The wine is refined in steel for 4-5 months and is then bottled in the Spring following the harvest. The result is a bright straw-yellow wine with greenish highlights. It has a full, delicate, elegant bouquet with floral aromas such as Lily of the Valley and fresh fruit such as lemons and green apples. On the palate it is young, dry, fresh and well-balanced. It is marvellous with fresh, delicate summery salads, seafood and light fish dishes, or simply chilled as an aperitif.

Vines are guyot trained with plant density at 4,400 plants/ha. Following harvest in mid-September, the grapes undergo soft pressing before being immediately separated from the skins. The fermentation is carried out at a low temperature 64°F (85% in stainless steel, 15% in barriques), prior to refrigeration and static racking of the must.
Excellent as an aperitif, and delicious with hors-d’oeuvres, fish and shellfish dishes.
