Wine Maker Notes
The fruit is hand picked followed by crushing, cooling of crushed grapes, and pressing. Fermentation begins by inoculating with selected yeasts. Halfway through the fermentation process, the wine is centrifuged (spun) to halt fermentation, creating a slightly sweet, semi-sparkling wine.
90% Torrontes/10% Sauvignon Blanc). The hand-picked grapes come from the Valentin Bianchi EstateVineyards. The grapes are crushed and cold maceration ensues, with static draining and pneumaticpressing. The grapes are separated from the lees through cold decantation and go through mustfermentation by inoculating with selected yeasts. Half-way through fermentation, the wine is centrifuged(spun) to halt fermentation. The grapes leave about 30 g/l of natural grape sugar and retains naturalcarbonic gas from fermentation through to bottling.
