Vinification and Ageing:Manual harvest in 18-kilos cases.After a brief cold maceration the grapes are soft-pressed and cold filtered. Alcohol fermentation without skin contact, in stainless steel tanks at a controlled temperature, for approx. 10 days. The wine rests on the lees though the winter, then is bottled the following spring.
