Wine Maker Notes We selected the grapes for our Pinot Noir from several vineyards throughout California. The fruit from Monterey County is delicate and pretty with a lean, classic Pinot Noir character. The cool climate of the region, influenced by Pacific breezes, produces vibrant fruit with lifted floral notes and a naturally acidic backbone. This provides a nice complement to the warmer-climate fruit, which shows lush, ripe flavors and a supple, soft body. Together, they form a well-balanced and pleasant wine..Combining the grace and power of the Snap Dragon itself, our wines marry a flashy fruit profile with significant oak presence. We fermented 100 percent Pinot Noir in stainless steel, with regular pump-overs to maintain good contact between the skins and the juice for maximum extraction of flavors. During aging, we used 100 percent French oak, which is a natural partner to this varietal. The soft tannins from the oak seamlessly integrate with the wine, adding mocha and spice notes that complement the delicate red-berry fruit character of Pinot Noir.
