Grapes are exclusively harvested by hand, and then delicately hand sorted on a “table de tri” (sorting table). Caves des Papes (“The Cellars of the Popes”) has remained a family winery since 1859. Today it is the oldest and largest wine cellar in the historic community of Châteauneuf-du-Pape, which was the summer residence of the Popes from 1309 to 1378. Now Caves des Papes has been inspired to capitalize upon its special access to the best winegrowing estates by creating a new Côtes-du-Rhône cuvée called “Héritage des Caves des Papes”, a tribute both to the winery owners and to the 2000-year history of winemaking in the region.
