Tasting Notes A pretty garnet color, this approachable, structured red opens with a rich bouquet of ripe dark fruit notes typical to wines from the Cote de Nuits. Selected whole cluster fermentation lends a slight vegetal flavor. The aromatic and perfumed finish offer fine grained tannins and balanced acidity.
Technical Notes The grapes were sorted, destemmed (50%) and cold soaked for 4-5 days at 50°F. During fermentation, the grapes were pumped over and the cap punched down. The wine matured for six months in French oak barrels (30% new), was racked and aged for another six months in neutral French oak. It was racked again before it was filtered and bottled.
