Cabernet is our specialty and we make approximately 1500 cases (3000 six packs) annually. Our Cabernet grapes come from classic hillside vineyards in Atlas Peak, Pritchard Hill, Diamond Mountain, and the Oakville Bench---areas that produce some of the most extraordinary mountain fruit of the Napa Valley. All our grapes are lovingly hand sorted (twice). Each vineyard is fermented and barreled separately, then carefully blended right before bottling to maximize complexity and balance. Our wines receive a minimum of 28 months of French Oak barrel age and then they spend anywhere from one or two years gently maturing in the bottle before being released. Our goal is to create elegant, balanced wines of the highest quality, ready to drink now while maximizing their aging potential. Holding wine in our cellars is more costly, but ‘No Wine Before It’s Time’ is more than a ditty at Tom Eddy Winery. You have our promise: when you buy an Eddy, it’s ready.
It’s hard to talk about the proposed winery without first talking about the land. We describe it as ‘the property’: twenty-two gorgeous acres of unspoiled Calistoga landscape sitting 1,000 feet above the valley floor surveying both Napa and Sonoma Counties. This is our home, our office, art studio, 100 year-old olive orchard and vegetable garden as well as stomping grounds for wild turkeys, deer, coyotes and even a few mountain lions. Coming to the Eddy property is taking a step back in time. You won’t see the bank robbers and stagecoach bandits that used to maraud these hills, and you won’t see the new winery.
After 34 years in the wine industry, many spent as custom crush clients, we are finally preparing to take the winery from ‘paper to property’. The architectural drawings are finalized and the winery will be strategically nestled among the trees, towards the back of the property, to minimally impact this swath of forested earth that lies between Calistoga and the Knights Valley
