Wine Maker Notes
A 100% chardonnay Méthode Cap Classique made from grapes grown in Robertson’s limestone soils. Only the premium juice is selected for this wine, 50% of which was fermented in Piece Champenoise barrels to ensure richness and an added dimension of flavour.
After blending this wood-matured wine with chardonnay fermented in stainless steel, the wine was bottled for the second fermentation with yeast contact for at least 48 months.
