Wine Maker Notes
Destemmed, vinified by gravity. 80% natural juices, 20% by pressing. Thermo-controlled fermentation instainless steel tanks for 3 to 6 months on natural lees. The wine is assemled 7 to 8 months after harvestingand stored in glass-tiled tanks. No wood is used in the vinification process in order to preserve the freshnessand full flavor of the Sauvignon Blanc grape.
Juicy grapefruit takes on an aura of its candied rind; pineapple near the core bites, but is mingled with a hint of caramel; and there is a subtle sense of creaminess against which the stony mineral cast and fruit skin tartness stand out in stark relief. ...
