Partially crushed grapes are cold-macerated before fermentation for 5 days at a temperature below 41°F. Fermentation is carried out at 77°F with selected yeasts, followed by a 10-day maceration period. The wine is aged for 12-14 months in French and American oak barrels.
Ideal served with red meats, pastas and cheeses.
