Wine Maker Notes
High fruit tones and lofty aromatics are the signature of this white blend. To encourage them, we began with a cold fermentation in stainless steel, which allowed aromas and flavors to develop slowly, maintaining true varietal expression and preserving fruit character. At the peak of aromatic intensity, we arrested fermentation to retain the vibrant freshness and juicy intensity. During blending, we used the lifted citrus and bright acidity of Chenin Blanc as the base of the wine, adding in Muscat and Riesling for spicy floral notes and Malvasia Bianca and Sauvignon Blanc for their dancing minerality.
