100% Cortese di Gavi grapes. The fruit comes from a new vineyard in the hills ofTassarolo. The grapes are softly pressed in a newpneumatic Willmes press. Fermentation takes place intemperature-controlled stainless steel tanks and lastsaround three weeks. There is no malolactic fermentation.Once settled the wine is bottled and released after anadditional period of rest in the bottle.
