Our 2010 Single Vineyard Cabernet Sauvignon is deep purple in colour with plum-red highlights. Aromas of red and black fruits, such as sour cherries, blackberries, plums, and strawberries mingle on the nose, with complementary notes from the barrel such as liquorice, tobacco, nutmeg, and dark chocolate, while subtle notes of rosemary and dill lend complexity. Surprisingly soft tannins make the first impression on the palate, followed by the harmony of refreshing acidity and berry flavours resulting in an elegant, complex wine with promising ageing potential.
After blending, thewine was stabilized and lightly filtered before bottling. A full-bodied red with concentrated aromas andflavors of sweet cherries, blackcurrants, fresh red fruit and toasty oak that is nicely balanced by firmtannins and juicy acidity.
Estate-grown grapes from vineyards located just a few miles away from the Don Maximiano estate werehand-picked and fermented in stainless steel tanks. The wine macerated for 12-20 days afterfermentation and then aged in French and American oak (33% new) for 6-8 months.
