Wine Maker Notes
The latest in the range of fine wines produced by “Il Borro”, the “Lamelle” white wine is made solely from Chardonnay grapes, hand-harvested and sorted manually. Harvesting of the grapes is followed by a soft and delicate pressing and separation of the skins and the must.Alcoholic fermentation takes place at a controlled temperature of 16°C, 50% in new French casks and the remaining 50% in stainless-steel vats, lasting for 8-10 days. The wine thus obtained is subsequently blended and left to mature for a further two months in casks. At the end of this period of maturing, the “Lamelle” wine is filtered and left for another two months in the bottle before being ready for sale, in April.Taste: well balanced and flavoursome with notes of freshness, elegant and refined, thanks partly to its short cask maturing, which gives it vigour and structure
As an aperitif or with vegetable-based first courses.
