A versatile varietal, Pinot Grigio shows distinctively different styles based on its climate. When allowed to ripen slowly in cool conditions, the fruit develops ripe flavors with bright balancing acids, picking up lovely citrus and floral notes. We sourced our fruit primarily from two regions, Monterey County and San Luis Obispo. The Pacific influence in these coastal regions lengthens the hang time of the grapes, resulting in a balanced profile, with a vibrant fruit-driven intensity and nice weight and on the palate.One of the oldest varieties, Pinot Grigio (also known as Pinot Gris) is a direct “cousin” of Pinot Noir. Perhaps the most apparent sign of its lineage is the pinkish-grey tone to its skin. When we brought the fruit to the winery, our first objective was to press the juice from the skins to achieve a lovely, light color. We then fermented the free run juice at very cool temperatures for one month, slowly extracting the delicate nuances and preserving the juicy pear and apple flavors.
With delicate flavors and mouthwatering acidity, this wine is a perfect companion to food. Serve chilled with fresh seafood or pasta dishes, or enjoy on its own as an aperitif on a warm summer evening.
