A blend of fruit from Shaw and Smith’s M3 Vineyard in Woodside plus selected blocks of new Dijon clones. The grapes were hand-picked, chilled, whole cluster pressed and barrel fermented in new and neutral French oak. The wine underwent partial malolactic for added complexity and mouthfeel. Matured on its lees with weekly battonage for nine months in French oak.
