All the grapes are picked by hand only. After the harvest has been completely de- stemmed, each varietal grape is vinified separately in order to allow each to fulfill its potential. Syrah and Carignan go under a partial carbonic maceration. After the malolactic fermentation in vats, the different grape varieties are blended and the wine is matured in 225-litre Bordelaise barrels for eight months.
After fining and bottled, the wine is kept for additional months before being released.

Minervois is a huge amphitheatre standing on the side of the Black Mountain with the Canal du Midi below. Currently 12,000 acres planted to vine, this appellation has been producing wine since 500 BCE. The appellation includes historic monuments such as Château de Minerve. (Minerva was the Roman goddess of Wisdom).
The soil includes chalk and pebbles on lower ground, sandstone and granite higher up towards the slopes of the Black Mountain.
