Wine Maker Notes The Paso Robles terroir lends our 2010 Cabernet an undercurrent of earthiness that adds depth to the aroma of dark cherry and black raspberry. Hints of coffee and black pepper also add complexity to the pure dark fruit profile. The palate shows the same bright, focused fruit flavor, with blackberry, black currant, and a dusty, red soil element. Four different types of French and American oak are well-integrated, contributing subtle notes of toffee on the mid-palate, followed by vanilla, caramel, and spice. The mouthfeel is silky and muscular, and the restrained alcohol levels from the cool growing season make this Cabernet Sauvignon a great match for richer fare. Sourced throughout the Paso Robles AVA, this Cabernet represents qualities from theentire wine region, most notably in the earthy undertones and minerality from Paso Robles’ red soils. In addition, 7% Petit Verdot was added, a classic Bordeaux blending varietal, to this wine to add an extra layer of depth, mid-palate richness, and distinct chocolate notes.
