Wine Maker Notes To craft a Pinot Grigio that captures the varietal’s inherently fun and fanciful nature with a rich core of luscious fruit, we selected grapes from California vineyards with notably warmer days and cool nights. We found the abundant sunshine developed rich, ripe and juicy flavors, while the nighttime fog slowed the grape’s maturity and left a bright, vibrant balance. This ultimately yielded a lively Pinot Grigio that sparkles with flavor.We love the light, friendly style of Pinot Grigio. To preserve that character and keep the fruit at the forefront, we fermented the wine in stainless steel at cold temperatures. This long fermentation, combined with select French yeasts, brought out the ripe peach and pear characters in the wine. We blended in approximately 20 percent Muscat to bump up the aromatics and give a nice plump roundness.
