The final blend was crafted to balance the acidity and freshness of the first pick with the pronounced tropical and exotic flavors of the second. The finished wine is very lively with grapefruit, pear, peach, lemongrass, jasmine, orange blossom and a weighted texture and acidity to extend the flavors on the palate.
A blend of estate fruit from two parcels: the south facing parcel (65%) and the north facing parcel (35%). The grapes were picked at two different times, nine days apart. The early pick was fermented to dryness in stainless steel and also in new and neutral French oak. The late pick was fermented in new and neutral French oak and continued undisturbed for six more months in barrel.
