Colour: deep ruby tending towards garnet with age
Nose and Palate: complex and spicy for Chianti Classico Riserva Flavour, structured and tannic.
90%Sangiovese , 10% Complementary grapes.
Vinification: Selection of the bunches in the vineyard; soft pressing with destalking; repeated daily pumping over for at least 20 days, at temperatures mainly between 28 and 32°C.
Maturing/ageing: Storage in vitreous cement tanks until malolactic fermentation is completed. Chianti Classico Riserva is aged in Allier barrels (hl 28-34) for two years .
