The color is deep purple. The nose is intense and elegant, with aromas of ripe red fruit including raspberryand strawberry with slightly toasted notes. Good balanced wine with soft tannins and a long smooth finish.Intense red fruit and licorice on the palate.
After de-stalking and crushing, the focus during the three week maceration period is on color and extraction.Two "delestages” per day are necessary (emptying the fermenting juice from the vat and pumping itback on to the solids). After racking and malolactic fermentation, the wines are blended and aged in vatson the lees with controlled oxidation.
Pair with a hearty beef stew, Bleu cheese and veal scallopine.
