Aromas of mango and lychee, with apple custard, papaya and lime peel, mixed in with herbal notes and green chili. The palate is concentrated, fruity and fresh, dominated by a persistent mineral overtone.
The grapes were harvested from Valle Hermoso, located eight miles from the Pacific Ocean, where the vineyards are planted to granite matrix. The berries were hand-picked, destemmed, cold macerated, and pressed under a layer of inert gas to preserve fresh fruit flavors and acidity. Fermented in stainless steel, the wine was aged for seven months on its fine lees with periodic battonage in oak barrels and stainless steel tanks.
