A blend of fruit from estate vineyards, the Black Label Sauvignon Blanc was specifically designed to enjoywith food and as such, is ideally suited for restaurant service. After pressing, the juice was portioned offinto two groups. Most of the wines were fermented in stainless steel at cool temperatures to retaincrispness and acidity. The remainder fermented in neutral oak barriques, which lent weight andcomplexity to the wine.
