Wine Maker Notes
We sourced our grapes from vineyards throughout California, selected to give us the ripe, juicy fruit profile we were seeking. California’s combination of warm, sun-drenched days and cool, Pacific-influenced evenings creates the ideal environment for growing grapes. Rich sugars develop during the day while the nights maintain the bright balancing acids. Sourcing grapes from multiple sites provides nuances in character that, when combined, create layers and complexity in the wine.Our Cabernet Sauvignon is made to be approachable and friendly, expressing the rich character of the varietal. Following harvest, the grapes were destemmed, crushed and placed into temperature-controlled stainless steel for fermentation. During fermentation, we maintained good contact between the juice and skins with regular pump-overs, fully extracting and incorporating the aromas and flavors of the fruit. The wine was then aged for nine months in a combination of American and French oak. To round out the profile, we blended in approximately nine percent Merlot and four percent Petit Verdot.
