As in previous vintages, we press off a portion of the grapes early, minimizing skin contact and retaining the bright fruit forward character. The balance is then left on the skins for an extended period of time, thus rounding out the mid palate and creating that great length in the finish. The aromas of this wine just explode out of the glass. Cinnamon clove is again the signature here, followed by rhubarb and black cherry cola. The flavor profile presents itself with juicy tannins followed by sweet vanillan and cedar spice. Fresh blueberries and boysenberries mixed with hints of dried herbs round out the finish.

Notes on the Flora Springs Cabernet Sauvignon 750ML 2010

Tasting Notes Aromas of black currants, cloves, sweet spices and anise are nicely integrated with juicy, soft tannins. Hints of tobacco, cedar and vanilla accompany the long, rich finish. Sustainable

Technical Notes The grapes were harvested from estate vineyards in St. Helena, Rutherford and Oakville. Immediately following primary fermentation, the must from a few tanks was pressed off its skins to maintain the bright, fruit forward elements of the variety. The remainder was left on its skins for an extended period of time to lend depth and complexity. The wine aged for 22 months in French (57%) and American (43%) oak barrels.
